When Lakewood couple Rachael and Coy Webb were making plans to open their own barbecue restaurant, they considered locations in small towns and mountain communities that exuded the kind of community feel they wanted to cultivate in their new establishment.
But a desire to remain close to Rachael’s family in Lakewood led the couple to stay put and the couple ended up opening Roaming Buffalo Bar-B-Que on a retail strip in southwest Denver.
But with that restaurant having just celebrated its five-year anniversary, the couple has now set their sights on opening a second Roaming Buffalo in a location that boasts many of the attributes of the communities they still sought out while still being an easy commute from their homes: Golden.
“Growing up I’ve always loved Golden,” Rachael said. “I was ecstatic when I was able to look out our windows and see the mountains.”
Roaming Buffalo Bar-B-Que, which will take over the former home of Dickey’s Barbecue Pit at 17121 South Golden Road, serves a style of barbecue that is rooted in Coy’s native Texas.
“We call ourselves Colorado craft bbq and we find ourselves to be pretty unique,” she said. “It’s definitely Texas-style in terms of being dry rubbed with sauce on the side but we have a flavor profile all our own.”
The restaurant also serves several Colorado meats in addition to classics like ribs, brisket and pork that Rachael says were traditionally used for barbecue early in Colorado’s history, including lamb, bison ribs and green chili and venison sausages. The available sides also have a southwestern flair as the macaroni and cheese contains poblano peppers while the coleslaw is made with cilantro and lime.
The 1,800-square-foot Dickey’s space is nearly double the size of Roaming Buffalo’s Denver restaurant and Rachael said the expanded space will allow it to be open for dinner and serve alcohol, which are not impossible in Denver. The options will include beer and wine but also agave margaritas and other fun drinks.
The Denver location has garnered strong views on Yelp, where the average rating is 4.5 stars out of 5. The restaurant has generated strong reviews in local media with Westword food writer naming it one of the top 100 Denver restaurants of 2019 last year.
“Roaming Buffalo has almost singlehandedly created a style of barbecue that Denver can call its own,” Westword food writer Mark Antonation wrote of Roaming Buffalo Bar-B-Que.
But while the restaurant has built up a following in Denver, Golden restaurant owner and Chamber of Commerce Chairman Dean Valdez said the degree to which Roaming Buffalo succeeds in Golden will likely come down to what Goldenites make of the quality of their food and service.
“I don’t think it matters if it’s from Denver or a chain like Dickey’s, that’s what it all comes down to at the end of the day,” Valdez said.
The new Roaming Buffalo Bar-B-Que will also be the latest addition to a Golden dining scene that had seen the addition of the new Tributary Food Hall, Smiley’s Smokehouse sandwich shop and Valdez’s own Bella Colibri Italian restaurant downtown.
It’s an expansion in options that is good for residents but does provoke some concerns for Valdez, who says he is worried not about his own businesses but the health of the scene as a whole.
“I’m worried about an oversaturation,” Valdez said. “The restaurant business is very expensive and there aren’t big margins and I think if we keep expanding we risk certain restaurants going out of business.”
